HCG Phase 2 Recipes: Soups and Broths

Soups and broths can be very nutritious and filling without adding a lot of calories. This makes them ideal for Phase 2 of the HCG Diet and an integral part of our cookbook.

hCG for Weight Loss

HCG No Bean Chili

14 oz. very lean ground beef
2 C chicken broth
10 cloves minced garlic
1 medium tomato diced
3 medium tomatoes pureed
2 medium onions chopped
4 T chili powder
1 t black pepper
1 t cayenne
2 t oregano
2 bay leaves
1 t cumin
1 t paprika
1 t basil
1 t salt

Note: This recipe yields 4 servings!

Mix all spices in a small bowl.
Preheat a large frying pan over medium heat.
Add ½ C chicken broth and minced garlic and saute for about 3 minutes.
Add ½ C broth and ground beef.  Cook until browned, about 5 minutes.
Add 1 C broth, all seasonings and all tomatoes.
Reduce heat to medium-low and simmer until desired consistency is achieved.
Divide equally into 4 containers and serve.
Any remaining chili can be refrigerated or frozen for future use.

Green Onion Soup

Chopped green onions
2 C chicken broth
1 t parsley
1/2 t paprika
1/2 t salt
1/2 t dill
1/2 t thyme
1/8 t cayenne pepper
1/8 t celery seed
1 bay leaf

Place chopped green onions and small amount of chicken broth in sauce pan and saute until tender. Add the remaining spices and continue for an additional 2 minutes.  Once thoroughly combined, add the remaining chicken broth, cover, reduce heat and simmer 20-30 minutes.

 

Simple Chicken Soup

14 oz. of chicken breast
2 celery stalks chopped
8C chicken broth
16 cloves minced garlic
8 T dehydrated minced onion
2t parsley
2 t basil
2 t paprika
1/2 t cumin
2 bay leaves
1 t salt
1 t black pepper
1 large pinch of white pepper

Note: This recipe yields 4 servings!

Mix all spices in a small bowl (set garlic aside).
Preheat a medium sized pot over medium heat.
Add 1/2 C chicken broth, minced garlic and chopped celery. Saute for about 3 minutes.
Add ½ C chicken broth and chicken breast.  Cook until browned, about 5 minutes.
Add remaining chicken broth, reduce heat and simmer until desired consistency is achieved.
Divide equally into 4 containers and serve.
Any remaining soup can be refrigerated or frozen for future use.
