HCG Phase 2 Recipes: Fruits and Vegetables
Fruits and vegetables are a great way to fill up and fight hunger on the HCG Diet. Here are some great recipe ideas for adding fun and variety to your fruit and vegetable dishes.
Seasoned Asparagus
1/2 pound fresh asparagus, trimmed
2 tablespoons water
1/4 teaspoon lemon juice
1/8 teaspoon dried mint
1/8 teaspoon sal
1 dash white pepper
Place asparagus and water in a 1-qt. microwave-safe dish. Cover and microwave on high for 5 minutes or until cooked. Carefully remove asparagus, leaving water in dish. Add mint, salt, lemon juice and pepper to water and mix. Drizzle over asparagus and enjoy!
Baked California
4 grapefruit1 tablespoon ground cinnamon
1 tablespoon Stevia
Preheat your oven's broiler.
Cut grapefruits in half and use a small serrated knife to cut out the sections in the halves. .
Sprinkle sugar and cinnamon over the top of each grapefruit half, adjusting as you see fit.
Place halves on a cookie sheet and broil for 3 to 5 minutes until the Stevia turns brown.
Asparagus Frittata
3 egg whites1 whole egg
Asparagus
1 clove minced garlic
1 T dehydrated minced onion
1 T water
1 t parsley
1t paprika
1 t cumin
1 dash of Salt
Tabasco (to taste)
Remove woody ends from asparagus. Break spears into 2-3 small pieces. Add to pan with garlic and cook until tender. Preheat oven to 400.
In bowl, mix eggs & water, then add asparagus, minced onion and spices. Stir mixture to blend together. Pour egg mixture into non-stick baking dish and bake for 10 - 15 minutes until done. Top with Tabasco and serve immediately.
Lemony Cucumbers
2 cucumbers, sliced
2 T finely chopped onion
2 T Stevia
1/4 cup vinegar
1 t celery salt
1/8 t ground black pepper
1 T lemon juice
In a mixing bowl, combine all ingredients. Toss, cover and chill for 4 hours.
Carribean Cucumbers
1 large cucumber, thinly sliced1 onion, thinly sliced
2 tablespoons fresh lime juice (about 1 lime)
1 dash hot pepper sauce, or to taste
2 tablespoons hot water
⅛ t garlic powder
1 pinch of black pepper
1 pinch of salt
Combine cucumber, onion, lime juice, salt, hot sauce and water in a bowl; toss to combine. Refrigerate until the flavors blend, at least 2 hours. Serve cold.
